Meats

Braised Meat – Precooked - To Cook
Option 1

1. Preheat oven to 180-200 degrees celcius

2. Place meat in an oven proof container

3. Bake meat for 30-40minutes.

4. Warm sauce if any by placing in a pot on stove for 5-10 minutes or microwave for 2 -3 minutes until warm

5. Combine with sauce if sauce is included in menu or laddle onto meat after serving.

Option 2

1. Place meat in an pot

2. Heat meat for 10 to 15 minutes on medium and occasionally stiring so bottom does not burn

3. Warm sauce if any by placing in a pot on stove for 5-10 minutes or microwave for 2 -3 minutes until warm

4. Combine with sauce if sauce is included in menu or laddle onto meat after serving

Chicken To Cook

1. Preheat oven to 180 – 200 degrees celcius.

2. Tray chicken in baking tray side by side and do not overlap chicken for even cooking

3. Bake chicken for 30-40minutes.

4. Check chicken is cooked by slicing into it and check juices run clear.

5. Warm sauce if any by placing in a pot on stove for 5-10 minutes or microwave for 2 -3 minutes until warm

6. Combine with sauce if sauce is included in menu or laddle onto chicken after serving.

Fish – To Cook
Option 1 - Bake

1. Preheat oven to 180-200 degrees celcius

2. Place fish in a lined oven tray

3. Bake fish for 15-20minutes

4. Warm sauce if any by placing in a pot on stove for 5-10 minutes or microwave for 2 -3 minutes until warm

5. Combine with sauce if sauce is included in menu or laddle onto fish after serving.

Option 2 – Pan Fry

1. Heat a pan up with olive oil

2. Pan fry fish on both sides for 3-5minutes per side

3. Warm sauce if any by placing in a pot on stove for 5-10 minutes or microwave for 2 -3 minutes until warm

4. Combine with sauce if sauce is included in menu or laddle onto fish after serving

Fish – To Cook
Option 1 - Steam

1. Preprea a deep pan with a lid

2. Place fish in a plate

3. Prepare water at the bottom of the deep ban and use something to lift the fish on plate up off the water

4. Place lid on deep pan and bring water to boil. This will steam the fish and takes 10-15 minutes

5. Combine with sauce if sauce is included in menu or laddle onto fish after serving.

Option 2 – Boil

1. Heat a pot up with water and bring to boil

2. Dip fish into water and boil for 5 minutes.

3. Warm sauce if any by placing in a pot on stove for 5-10 minutes or microwave for 2 -3 minutes until warm

4. Combine with sauce if sauce is included in menu or laddle onto fish after serving

Koftas To Cook

1. Preheat oven to 180-200 degrees celcius.

2. Weigh mince mixture into 200gram units and roll into a log

3. Place koftas onto a lined baking tray and bake for 30-40 minutes

4. Check koftas are cooked by cutting one open to make sure it still isn’t pink inside.

5. Warm sauce if any by placing in a pot on stove for 5-10 minutes or microwave for 2 -3 minutes until warm

6. Combine with sauce if sauce is included in menu or laddle onto meatball after serving.

Lamb - Roast To Cook

1. Preheat oven to 180 – 200 degrees celcius.

2. Tray lamb in baking tray and add in 2 cups of water

3. Bake lamb covered with tin foil for 40-45minutes.

4. Remove tin foil and bake for an additioanl 15 minutes

5. Warm sauce if any by placing in a pot on stove for 5-10 minutes or microwave for 2 -3 minutes until warm

6. Combine with sauce if sauce is included in menu or laddle onto lamb after serving.

Meatballs To Cook

1. Preheat oven to 180-200 degrees celcius.

2. Weigh mince mixture into 200gram units and roll into a ball

3. Place meatballs onto a lined baking tray and bake for 30-40 minutes

4. Check meatblls are cooked by cutting one open to make sure it still isn’t pink inside.

5. Warm sauce if any by placing in a pot on stove for 5-10 minutes or microwave for 2 -3 minutes until warm

6. Combine with sauce if sauce is included in menu or laddle onto meatball after serving.

Meatloaf To Cook

1. Preheat oven to 180-200 degrees celcius.

2. Place mince mixture onto a lined baking tray and shape into a log.

3. Bake for 45 – 60 minutes.

4. Check meatloaf are cooked by cutting one open to make sure it still isn’t pink inside.

5. Warm sauce if any by placing in a pot on stove for 5-10 minutes or microwave for 2 -3 minutes until warm

6. Combine with sauce if sauce is included in menu or laddle onto meatball after serving.

Mince To Cook

1. Heat a tablespoon of oil in a fry pan on medium heat.

2. Cook mince for 5-10 minutes until fully cooked through.

3. Add sauce into pan if any for another 10 minutes until hot.

Vegetables

Broccoli To Cook

1. Bring a pot of water to boil

2. Cook broccoli into the pot for 2-3 minutes for perferred consistancy

3. Remove broccoli from pot and dip cooked broccoli in cold water to stop from over cooking

4. Warm sauce if any by placing in a pot on stove for 5-10 minutes or microwave for 2 -3 minutes until warm

5. Dry and Serve with sauce if any included or laddle onto broccoli after serving.

Cabbage To Cook

1. Preheat oven to 180-200 degrees celcius.

2. Bake Cabbage 15 minutes.

3. Warm sauce if any by placing in a pot on stove for 5-10 minutes or microwave for 2 -3 minutes until warm

4. Combine with sauce if sauce is included in menu or laddle onto cauliflower after serving.

Cauliflower To Cook

1. Preheat oven to 180-200 degrees celcius.

2. Bake cauliflower 15 minutes.

3. Warm sauce if any by placing in a pot on stove for 5-10 minutes or microwave for 2 -3 minutes until warm

4. Combine with sauce if sauce is included in menu or laddle onto cauliflower after serving.

Green Beans To Cook

1. Bring a pot of water to boil

2. Cook green beans into the pot for 2-3 minutes for perferred consistancy

3. Remove green beans from pot and dip cooked green beans in cold water to stop from over cooking

4. Warm sauce if any by placing in a pot on stove for 5-10 minutes or microwave for 2 -3 minutes until warm

5. Dry and Serve with sauce if any included or laddle onto green beans after serving.

Kale To Cook

1. Bring a pot of water to boil

2. Cook kale into the pot for 2-3 minutes for perferred consistancy

3. Remove kale from pot and dip cooked broccoli in cold water to stop from over cooking

4. Warm sauce if any by placing in a pot on stove for 5-10 minutes or microwave for 2 -3 minutes until warm

5. Dry and Serve with sauce if any included or laddle onto kale after serving.

Root Vegetables To Cook

1. Root Vegetables include kumara, pumpkin, swedes, parsnips, beetroot, carrots

2. Preheat oven to 180-200 degrees celcius.

3. Bake vegetables 30-40minutes.

4. Warm sauce if any by placing in a pot on stove for 5-10 minutes or microwave for 2 -3 minutes until warm

5. Combine with sauce if sauce is included or laddle onto vegetable after serving.

Salad / Slaw - To Cook

1. Mix salad / slaw vegetables together with provided dressing or sauce

2. Serve Cold
